That's what happens in every show where the mytharc takes over from the stand-alone episodes and casefiles. Plus, they kept making all these powerful characters more and more powerful, until Willow was basically a walking deus-ex-machina, so what's the point of "ordinary guy"?
They didn't see the strength that Xander had. They matured his character, gave him a steady job, and a relationship he cared about and was trying hard to grow with; and then decided hey, let's get rid of Anya and tweak this and that...and sabatoged his characterization and story-line. FOR NO REASON! They could have killed off Anya, or had ~her be the one who backed out of the wedding, etc. But they deliberately threw Xander under the bus. D:
I personally think Nicholas' idea of having Xander come out as gay would have worked much better than Willow. It would have gone a long way towards explaining the screwed-up romances he had, and his rapport with all the girls; and it would have been a nice thing to see a gay male character on a show/movie where the guy wasn't presented as flaming. Gay men are just as varied as gay women, but we don't usually get to see that! Aaaand, imo, there ~was enough canonically between Xander and Spike that I could see a real friendship springing up between them, and maybe more, if they hadn't screwed it all up.
I appreciate a show that has strong women, but to me, strong doesn't mean entitled brats, and it doesn't justify sacrificing male characters unnecessarily.
